Summer Recipe: Sugar-Free Popsicle

A Popsicle recipe, that is sugar-free and delicious, that is sure to be a big hit with everyone!

With summer officially less than a couple weeks away and the kids now out of school for the break, you want to have something cold and tasty but with little calories, on hand.

Here is something that you and the kids, big and small, will enjoy and it is an easy and fun activity to do with your kids.

Each pop, about a 2 ounce size, is about 2 to 3 calories so it allows you to enjoy as a snack throughout the day without compromising your calorie count. Think about how much sweets drinks and foods your kids have in a day. This can ease your mind that even if they have 10 of them, throughout the day, it is only 20-30 calories.

The wonderful thing about these pops is that with all the flavors available, you and your kids can have lots of fun making your your own combination of creative flavors and colors.

SUGAR-FREE POPSICLES

Ingredients:

1 (4-serving size) envelope sugar-free gelatin (ex: Jello-O)

1 (2 quart) envelope sugar-free artificially sweetened powdered drink mix (ex: Kool-Aid)

1 cup hot water (to dissolve the gelatin)

7 cups cold water

Directions:

In a 2 quart mixing pitcher, dissolve gelatin in 1 cup hot water. Add drink powder; stir, and then add 7 cups cold water. Stir until completely incorporated. Pour into Popsicle forms with sticks or you can use Dixie cups and sticks. Freeze. Serve.
