Shebeen Brewery In Wolcott, CT Under Construction

Craft brewery featuring intriguing and unique beer styles with some only available at the brewery. Stay tuned for a grand opening in late Spring.


Connecticut's latest craft brewery is set to open in late Spring. It will feature a tasting room and private tours with the brewers.

We feature fresh craft beers made with regional and local ingredients and include varieties like a West Coast Pale Ale, Rye Porter, Germain Kolsch made with Agave Nectar, a Cannoli Beer, Black Hop IPA, Concord Grape Saison and many more to come.

The brewery is located on the Waterbury/Wolcot border in the Sullivan Brothers building. We plan to have events throughout the year and fresh local beer to go.

Nice - I've never had a rye porter before. I'm looking forward to this collection of brews too, especially the Concord grape saison.

The Concord Grape Saison is a specialty of mine and has wine like characteristics. Not everyone appreciates it but I find it to be very complex and different than what is normally considered beer. This weekend we are making the Cannoli Beer with our pilot system and the Concord Grape next weekend. We are busy fitting the space out and waiting for our license so stay tuned for more news.

I think rye is a completely underrated grain and adds a nice and somewhat spicy bite to a beer but is very smooth. I like it in Kentucky Bourbons but our porter was designed to be a session beer. Very smooth and flavorful but not high in alcohol or hop bitterness. We want that rye as well as dark wheat flavor to shine in a very drinkable beer.

We also brewed a German Kolsch the other weekend made with Agave Nectar. We are calling it a German Cerveza. Should be out by late spring and its perfect for hot summer days.
